Chicken Adobo
Ingredients
– 2.5 lbs bone-in chicken thighs/legs
– 1 cup vinegar
– 3/4 cup soy sauce
– 2 tbsp palm sugar
– 20 cloves garlic(smashed)
– 4 bay leaves
– 1 tbsp black peppercorns(lightly grinned)
– 1/2 cup water
– 2 tbsp neutral oil
– Green onion for garnish
– Hot rice
Instructions
1. In a bowl, combine the chicken, vinegar, soy sauce, palm sugar, garlic, bay leaves, black pepper, and water.
2. Let that marinade in the fridge for at an hour to overnight.
3. In a pot or pan, heat oil on medium heat and sear the chicken.
4. Once the chicken is browned, add the marinade.
5. Simmer low for 45 minutes making sure to flip the chicken every now and then.
6. Reduce the sauce on medium heat until your desired thickness.
7. Serve with hot rice and garnish with green onion.
